My Mom's Impossible Pie.
Probably not famous in anyone else's eyes, but my mother was always a celebrity to me, and this was one of her favourite recipes.
|4oz caster sugar|
|16fl oz milk|
|2oz plain flour|
|3oz desiccated coconut|
|Quarter of a teaspoon salt|
|half a teaspoon baking powder|
|Few drops vanilla essence.|
|Put all the ingredients into a bowl, whisk together into a batter, pour into a greased 10 inch flan case or oven proof dish and bake in a pre-heated oven at 180 deg.C (350 deg.F ) gas mark 4 for 50 to 60 minutes.|
|The pie will separate in cooking into a pastry base, custard middle and coconut topping. Serve hot with cream or cold as a cake.|
